  1. Offal
    Not the main part of the meat. Could include lungs, liver, bone marrow, etc.
  2. Verjus
    Literally, it means "green juice" but it can also be found in red. It is sour grape juice from underripe grapes. Good for making salad dressing.
  3. Garcon (small S under the C)
    Literally, it means "boy" but has been used to refer to people who are a lower level.
  4. Xantifil
    The natural yellow color like in butter.
  5. Maitre d'hotel
    Literally it means "matron of the house" but it is now masculinized and meant to be the one who runs the whole house.
  6. Les Cuissons
    Major methods of cooking
