    • 3. When the customer is ready for a 2nd drink, ask if they would like to keep the same glass
  13. Cognac
    • - Brandy = fermented mash of grapes
    • - Cognac = Brandy made in Cognac region of France
    • * TJ Martell = best COGNAC
    • VS -> VSOP -> XO (Very Special Old Pale Xtra)

    • To pour:
    • - hold middair / on table by stem
    • - pour until barely touchign rim
    • - use large Snifter Glass
    • - comes out to 1.5 oz

    • To heat glass:
    • 1. cup glass in hands
    • 2. pour in hot water before cognac
    • 3. hold glass over steam of espresso machine
    • 4. use lighter
  14. Brandy
    • - from fermented mash of grapes
    • - most popular: EJ, Paul Mason

    • To pour:
    • - hold middair / on table by stem
    • - pour until barely touching the rim

    • To heat glass:
    • - cup glass in hands
    • - pour hot water before brandy
    • - light glass w/lighter
    • - hold glass over steam from espresso machine
  15. Rum
    • 1. Light Rum - sugar cane
    • 2. Dark Rum - molasses (rum drinkers typically prefer Dark Rums)
    • 3. Spiced Rum - light/dark combo + herbs/spices
    • 4. Ages Rum - stored in Oak Barrels 4, 8, 12, 20, 21, 28 y

    • NOTE:
    • - Castillo = House Light Rum, made by Bacardi, same thing
    • - Captain Morgan's - Spiced Rum
    • - Brujal - most common Dominican Rum
    • - Myers's - most popular Jamaican rum, darkest
    • - Wray & Nephew's - 126 proof (Jamaican Overproof Rum)
