  1. ATK Foolproof Double Crust Pie Dough
    Ingredients

    • -2 1/2c (12.5oz) AP Flour + Dusting
    • -2 TBSP Sugar
    • -1 TBSP Salt
    • -1 1/2 Sticks Butter cut into 1/4in pieces and chilled
    • -1/2c Veg Shortening cut into 4 pieces and chilled
    • -1/4c Vodka chilled
    • -1/4c Ice Water

    Directions

    • -Process the Flour sugar and salt in processor then scatter the butter and shortening in and process till no flour bits remain and mix is clumpy.
    • - Scrape bowl and sprinkle 1c flour over mix and give 4-6 pulses till distributed.
    • -Transfer to medium bowl and sprinkle water and vodka over mix, stir and press with spatula till dough sticks together.
    • -Divide dough in two and flatten into 4in disk.
    • -Refrigerate for 1hr in plastic, thaw 10min before rolling.
  2. ATK Apple Pie
    Ingredients

    • -1 recipe double crust pie dough
    • -2TBSP AP Flour + dusting
    • -3/4c (5.5oz) plus 1TBSP Sugar
    • -1tsp grated zest+juice from 1 Lemon
    • -1/4tsp Salt
    • -1/4tsp Ground Nutmeg
    • -1/4tsp Ground Cinnamon
    • -1/8tsp Ground Allspice
    • -2lbs Firm Macintosh Apples(4 Large), peeled, cored and sliced 1/4in thick
    • -1 1/2lbs Granny Smith Apples(3 Large), peeled, cored and sliced 1/4in thick
    • -1 Large Egg White, lightly beaten 

    Directions

    • -Roll dough into 12in circle on a lightly floured surface to fit 9in pie.
    • -Wrap and refrigerate 30min then roll other dough and refrigerate on parchment lined sheet pan covered in plastic 30min.
    • -Place rimmed sheet pan on lower rack at 500 degrees.
    • -Mix flour, 3/4c of sugar, zest, salt, spices in large bowl.
    • -Add lemon juice and apples tossing the mixture then adding to dough lined pie plate.
    • -Mound mixture in the middle slightly then roll 2nd dough over pie.
    • -Trim, fold, and crimp edges cutting 4 vent holes in the top.
    • -Brush with egg white and sprinkle with sugar then bake on heated sheet pan 425 for 25min or golden color.
    • -Reduce to 375, rotate and bake 30-35min till juices bubble and crust is deep brown.
    • -Cool on rack about 4hrs till room temp. Serve.
  3. Angel Food Cake
    • 16c tube pan
    • 10-12 servings

    • Ingredients
    • 1 1/2 c Sugar
    • 3/4c Cake flour
    • 12 large egg whites room temp
    • 1tsp Cream of Tartar
    • 1/4tsp Salt
    • 1 1/2tsp Lemon Juice
    • 1 1/2tsp Vanilla extract
    • 1/2tsp Almond Extract

    • Directions
    • -325 degrees, lower middle rack, 16c tube pan, parchment no grease.
    • -whisk 3/4 sugar and flour and set aside.
    • -In mixer whisk egg whites and tartar medium speed for 1 min then med high for 1 min.
    • -Add remaining 3/4c sugar and salt 1TBSP at a time till soft peak.
    • - Whisk in lemon juice and extracts by hand folding flour mix 1/4c at a time.
    • -Add mixture to the pan and bang pan to settle the batter.
    • -Bake 50-60min and cool 2-3hrs upside down, unmold using a knife.

    Ingredients

    • 1 package philo dough    
    • 1 lb sweet cream butter melted 
    • 1 1/2 cups of finely chopped nuts of your choice 
    • 1/8 cup sugar
    • 1/8 tsp cloves    
    • 1/8 tsp nutmeg    
    • 1/8 tsp cinnamon    
    • 1 tbs water    
    • 1 cup Dede's simple syrup    
    • ground pistachio to decorate          

    • Simple Syrup:
    • 2 cups sugar    
    • 1 cup water    
    • 2 tbs lemon juice    
    • 1 tbs Rose Water    
    • 1 tbs Orange Blossom Water
