  3. Saturated Fatty Acid
    • No carbon-carbon double bonds
    • Saturated with hydrogens at every possible position
  4. Unsaturated Fatty Acid
    One or more carbon-carbon double bonds formed by the removal of hydrogen atoms from the carbon skeleton
  5. Steroids
    • Lipids with a carbon skeleton consisting of four fused rings
    • Created by varying functional groups attached to the rings
    • E.g. cholesterol -- precursor from which all other steroids are synthesized
  6. Phospholipids
    • Similar to fats, but have two fatty acids attached to glycerol and a phosphate group at the third position
    • Fatty acid tails are hydrophobic
    • Phosphate group and attachments form a hydrophilic head
    • Arranged as a bilayer at the surface of a cell
