    1806 in The Balance and Columbian Repository newspaper.

    No real definition, the most close is:

    A cocktail is a stimulating liquor, composed of spirits of any kind, sugar, water and bitters

  26. Blend technique
    Ice(crushed preferred) and ingredients inside a blender

    • NB: blending => slow at beginning and faster later
    • crush because it blend faster and less wear on blender's blades
  27. Build  technique
    pouring the ingredients directly into the glass.

    Built => respect the ingredient order into a glass full of cubed ice (unless otherwise stated)
  28. Layer technique
    Drinks are poured into a glass to form layers => use of bar spoon

    NB: less alcoholic is the ingredient, the heavier it is.

    Exception: cream liqueurs, which usually float.
  29. Shake and strain technique
    Shake => drink mix, chills, aerate(add air bubbles) and dilutes

    Little ice => it will melt quickly => cocktail overdilueted

    • NB: always fill the shaker three-quarters full ice
    • Never shake in front of the customer
    • Never shake fizzy ingredients

    Strain => use a strainer between shaker and cube ices inside the shaked ingredients.
  30. Stir and Strain
    Stir => mixing glass(or boston glass if mixing is unavailable) and bar spoon to stir for 30 seconds. Strain with a Julep strainer.

    NB: stir allows to control dilution and prevents the aeration
  31. Mix
    Mix => spindle mixer => mixed drinks as to be put in a glass full of cubed ice
  32. Hygiene rules
    1- wash hands, the more the customer see you wash the better it is.

    2- never touch hair or face whilst on the bar

    3- never eat behind the bar, food, ice, straws or gums

    4- never couch or sneeze over the bar top or in the ice wells => use always a napkin out of the customer sight

    5- never scoop up ice with a glass. Glass fragments could cause injuries to customers

    6- always empty ice well and wash it and the surrounding area thoroughly if a glass should break anywhere near to it. Pour some grenadine over ice to mark it as being "trashed"(unsafe), immediately after the breakage to warn colleagues to not use it

    7- never turn up for work unclean or smelly

    8- never serve a drink  in a chipped, cracked or dirty glass
  33. Professionalism rules
    • 1- never start work without lighter, waiter's friend and pen
    • 2- never slouch or lean behind the bar. Stand up straight and be attentive.
    • 3- always be aware of surroundings => be always aware of any potential customer waiting => give them cocktail list even if you are busy and put a napkin in front of customers that have ordered
    • 4- never stand with out back to the customers
    • 5- always smile to customers
    • 6- remain always sober during the shift. More you drink less control you have
    • 7- never give away drink without boss permission
    • 8- never talk bad about a customer whilst other customers are present.
    • 9- never swear behind the bar
  34. Useful tips
    • 1- keep your station always clean
    • 2- don't fill glass to the top => difficulties to handle it (waiters and customers)
    • 3- hold glass by the steam or the base
    • 4- Put everything back in correct place when you have finished with it. Bottles with label facing the customer
    • 5- cigarette => light it
    • 6- customer ordered => relative glass on the bar. Group together if they are the same drink
    • 7- Serve similar drinks => use straws or fruit to indicate what is what. es: vodka lemon and gin lemon => vodka with lemon garnish and gin with lime garnish
    • 8- if customer ask less ice in the drink explain that less ice => faster melting and twice as much mixer
    • 9- if you make a mistake in the order don't tell to customers, just start again
    • 10- if a glass is wet on the outside put a napking down on the bar first
    • 11- start making a blended or crushed ice drink before the rest of an order and serve it after the rest.
  35. Bar Set-up
    • 1- check that the bar is well stocked with glassware needed
    • 2- check that your bar equipment is all correct and present
    • 3- check that the battles are clean an in the right place, with pourers or facing to the left, with labels in facing toward the guests.
    • 4- running low bottles have to marry up, ensure back-ups
    • 5- Check for clog pourers( especially with high sugar liqueurs)
    • 6- Wipe the cocktail lists and place them on tables and bar
    • 7- Prepare juices and mixers, ensure that they are not off
    • 8- Wash all fruit and prepare garnishes; if they are not good enough to be eaten than throw them away
    • 9- Ensure that cleaning cloths and bar towels are to hand
    • 10- Fill the ice wells with ice cube/crushed
  36. Drink types - Collins
    Spirit, lemon(or lime) juice, sugar and soda water, in a collins glass filled with ice. Original recipe is with gin and take its name from John Collins, a London bartender from 19th century
  37. Drink types - Cooler
    wine with carbonate( soda, ginger ale or another carbonate), sometimes also bitters or grenadine. Ratio soda/spirit 3:1.

    Served in collins glass garnished with citrus spiral
  38. Drink types - Fizz
    spirit, citrus fruit juices and sugar; shaken and strained into a ice-fille collins glass and topped with fizzy, as soda, ginger ale or champagne.

    • NB:
    • Golden fizz = add an egg yolk(rosso d'uovo)
    • Cream Fizz = add cream

    egg, sugar and spirit or fortified wine, similar to egg nog(zabaione) but without milk or cream. Shaken and strained into a martini or wine glass, with a nutmeg dusting(spruzzata di noce moscata)

    Created during colonial times, originally served as a hot drink.

    drinks made by blending the ingredients with crushed ice
  42. Drink types - Highball
    Simple cocktail with 2-3 ingredients(spirit and carbonate usually), served in ice filled collins(or highball) glass. High ball means "hurry", remembering the american train signal "highball" that was raised to a train driver if the train was in late.

    NB: highballs don't contain citrus fruit juice.

    A gin-tonic is a highball
  43. Drink types - Martini
    Generally gin and vermouth in a martini glass. It's for people who like the taste of alcohol.

    • NB: from 50s martini were often made with vodka. Vodka base => fruity without gin or vermouth.
    • During 90s the V glass has acquired the "martini glass" name.

    • Types of martini:
    • Sweet: 4 sweet vermouth
    • Dry: 4 Dry vermouth
    • Perfect: 2 sweet + 2 dry
